The fennel, combined with all the other spices in this recipe, will help with decreasing as well as preventing any bloating. Keeping your tummy happy and healthy.
Besides leaving your body feeling light and nourished this recipe is especially great for those hot summer nights, when you don’t feel like spending a whole lot of time in the kitchen but still want to go for a clean and healthy option.
Black rice noodles (measure out a 2 person portion)
6 sliced Radishes
Freshly chopped fennel (about 2 hands full)
6 big lettuce leaves
Sliced bamboo shoots
1 tbsp Soy sauce (GF or regular)
1 tsp Coconut oil
1 tsp coriander seeds
1 tsp fennel seeds
Red chili flakes
Time: 10 mins
Portion: 6 wraps - 2/3 persons
1. First, start by bringing a liter of water to a boil and start cooking your noodles for about 5 mins. Turn of the heat, rinse out your noodles with cool water.
2. Heat up a frying pan with a tsp of coconut oil. As soon as it is hot enough add your noodles to the pan as well as the soy sauce, coriander seeds, fennel seeds, chili flakes and sesame noodles. After 1-2 minutes turn off the heat and add a good drizzle of sesame oil. Let your noodles cool off a bit.
3. Meanwhile start chopping your fresh fennel, slicing your radishes and peel off the lettuce leaves of your crop.
4. Finally, it is time to ensemble your wraps! Start out by dividing your spicy noodles in the lettuce wraps and after adding your fresh fennel, radish, and bamboo slices.
