Flavor-Packed Vegan Eggplant Fries with Dynamite sauce



How about these flavor-packed vegan eggplant fries with Dynamite sauce, for your next (somewhat) healthy snack cravings? Oh, did I already mention they are super crunchy

These were actually a part of my vegan dragon roll sushi (recipe will follow soon). But they turned out SO damn good, I just had to share them in a post of their own.

I don't have a whole story this time. 'Cause, well, these babies speak for themselves.

Ingredients*:

For the fries

- 2 tbsp of flaxseed

- Panko breadcrumbs

- Flour

- 1 eggplant

- 1 tbsp of soy sauce

- 1/2 tbsp of sweet soy sauce (Ketjap Manis)

- A good drizzle of sesame oil

- Coconut oil


For the sauce

- 1 tbsp of vegan mayonnaise 

- 1/2 tbsp of siracha

- A good drizzle of sesame oil

* Dutch measurement translation:

1/2 tbsp = 1 eetlepel

1 tbsp = 2 eetlepels

2 tbsp = 4 eetlepels

Time: 15 minutes


Directions:

Prep:

The night before, soak your flaxseeds in a bowl of water, just enough to cover the flaxseeds completely.

1.Start by cutting your eggplant into thick slices. Then cut them in half. Leaving you with the perfect shaped fries.

2.Heat up some coconut oil, about a tablespoon, in a frying pan. As soon as your pan is hot enough get your eggplant fries in there and add both soy sauces and a good drizzle of sesame oil. Grill them for about 5-7 minutes on medium heat.

3. Now once they are cooled off, get your soaked flaxseeds ready as well as a bowl of panko and a bowl of flour. Start by coating your eggplant in the flour, then dipping it in the soaked flax seeds and covering it in breadcrumbs. Now repeat this with all the fries.

4.Get a new, clean, frying pan and load it up with coconut oil, to start deep frying these babies. The layer of oil doesn't have to be as deep that they completely cover your fries, covering one side is good enough and saves you some oil. Just flip your fries as you go. You can test if the oil is hot enough by dropping some breadcrumbs. If the crumbs bubble back up, it's hot enough. Start frying your eggplant fries for about 1-2 minutes or once they are golden brown on both sides.

5. For the sauce part. Well, basically just mix the ingredients together in a bowl. You've got this.
