These vegan, no bake oatmeal lemon energy bars are super yummy, satisfying and ready to munch on in 5 mins. No fuss. You most likely already have the only 4 ingredients that you will need lying around in your kitchen.
They are perfect to take to work, or anywhere else and snack on during the day when you need a pick me up. Or even as your breakfast on the go.
They have a great lemony fresh kick to them that will pick you right up!
- 1 cup / 125 gr of oatmeal
- 10 medjool dates
- juice of 2 lemons
- 1/2 tbsp of coconut oil
1. Add all your ingredients to your favorite blender and blend away. 2.Spread out your mixture into a square or rectangular form. Make sure it is not too big, so you can still get a thick layer of the mixture in there. 3. Let it sit in your fridge overnight and in the morning all you need to do is take a knife and cut them into your desired bar size.
